Syrup Grades
Vermont separates its Maple Syrup into 4 unique grades. The grades reflect the color and the fullness of the flavor. It does not reflect a difference in quality. As syrup gets darker in color the flavor gets stronger and richer. The grades are as follows.
Golden - Delicate Taste: This is the lightest of the grades. It is yellow in color and sweet in taste. It has a gentle maple flavor.
Amber - Rich Taste: This is the most commonly found grade of syrup, often referred to as table grade. As the name would indicate it has a medium amber color and a rich maple flavor.
Dark - Robust Taste: This syrup is a deep amber color and possesses a strong maple flavor. This is very popular amongst maple lovers.
Very Dark - Strong Taste: This is the darkest and most bold flavored syrup available. It can take on a deep rust color and is very sought after. This is best for true maple lovers and for cooking as it has the most maple flavor available.
